IME Bock is *not* something you should age.

You may be surprised, that suggests you have bought into the hype around hoppy beer in recent years. While it is true that hoppiness diminishes over time, it's not anything like what the kids go on about today. 

In any case, my beer is bottle-conditioned, which preserves freshness, even though the kids today believe otherwise. So, yes, it stays fresher than it otherwise might have.

Now, I didn't say it's not changed at all over 2 - 3 years, just that it is still very hoppy. And I only used 100 gm / 20 litres; I believe the kids use a lot more these days.
