Yes. The use the method of bottle fermentation, which is the traditional and best method, used also from Gutmann and many others.

The disadvantage of bottle fermentation is that the brewery can't offer wheatbeer in barrrels or KEGs. As a pub owner I know that I need wheatbeer on tap, because many regulars, especcially young guests, like to drink mixtures of wheatbeer with Cola, lemonade, banana juice etc. The Hefeweizen of the brewery Zehendner is bottle fermented, the Hefeweizen of the brewery Grasser in Huppendorf is not bottle fermented.

Also the brewery Spezial offers an own "Spezialbräu Weisse", also with smoked malt. I recommend to taste both beers compared.
