Joe, from a fellow vegetarian with many visits to Bamberg and region, I can tell you that it's not so easy but easier than it used to be!  Most of the brewery stube are not so good for veggie meals; the shining exception is Spezial who have a comprehensive veggie menu.  Otherwise, you have to pick up that odd things available, such as salads (not so great at this time of year), chips and the like.  Abseits also have a pretty good selection.

Also not many options in restaurants, though Gerhard can give you more up to date info.  If you want to buy veggie stuff in shops, the best bet is Tegut, which at Ludwigstr 25, opposite the Bahnhof (it's ticked in the corner by the post office).  Tegut are fairly upmarket - I guess equivalent to Marks & Sparks - and have a fairly good range of Tofu products.  The Chinese takeaways on Ludwigstr are cheap & have a range of noodle/rice veggie dishes.  The Turkish cafe on Konigstr (just down from Fassla away from Ludwigstr) also do Falfels and a few other things; then there are numerous pizza/Italian places, which are ok.

Actually, it sounds much better than it really is!  Good luck and have a good time!
