Schlachtschuessel

In previos times the households in the villages have had their own animals (p.e. pigs, chicken, rabbits). They slaugth them itself at home. it was a part of the social behavior to give some food to the other households - in the expection to get food from the neighbors if they slaught. A second reason is the lack of cooling techniques. A pig was too much pork for one household.

In a big pot ("Kessel") with hot water they heat parts of the big, p.e. pork belly and other not so expensive parts of the pig (head, foot etc.). Together with herbs and salt and pepper they cooked a "Schlachtsuppe" (slaught sooup). "Kesselfleisch" is the name of the parts of the big heatened in the water/soup.

Restaurants and brewpugs which slaught (z.B. Kundmüller, Grasser etc.) offer such dishes at the day on which they slaught and some days after.

The "Schlachtschüssel" consists of
- fresh blood sausage
- liver wurst
- Kesselfleisch (pig pork belly):
- Sauerkraut
- bread
- mustard

In some regions they add bratwurst or offal.

Today only few restaurants slaught because the laws have changed and it is expensive to have legal rooms. So in the most places they buy the ingredients for the "Schlachtschüssel"..

If You don't like p.e. blood sausage You can order a selection of the parts.

Traditionally the price is cheap. If I remember correctly only 4.50 Euro at Grasser in Huppendorf. Grasser argues, that this is only the trash if they slaught to get better parts of the big they need for their brewpub and that loves his guests.

In other places they know that Schlachtschüssel is a speciality and have expensive prices (for "trash"). So you can pay more than 20 Euro including maybe a spirit for groups after reservation, p.e. in and around Schweinfurt:
