Schlenkerla and Spezial

It is stated in the book "Smoked Beers" Merz (at Spezial) malts in the winter and increases the amount of smoked malt during the course of the year (varies from 40-60%) because the smoke character of the malt decreases during the course of the year. It's really not an exact science.
