Good times in Zoigl Land!

I think I put this info out before, whilst I was rambling on about our visit to Eschawo. All the stube in both towns use some combination of pilsner/munchener malt but the Eschawo brewers use a higher proportion of munchener, with Loistl highest at 50/50. Anton Heinl told me that this was because Rudi is a CDU man - the 'black' party! I'm don't know exactly but I would think that Peter Weiss in Schlosshof uses 70% pilsner. The Neuhaus brewers all use 90% pilsner, with 10% munchener 'just for colouring' I was told. In Neuhaus, we had the opportunity to try one of the non-commercial zoigls i.e. brewed by two of the houses that still have brewing rights. That was 100% pilsner and was the best zoigl that I tasted - straight from the barrel in the cellar, with just a light coating of CO2 - absolutely delicious. To the best of my knowledge, all the brewers add hops (without exception, as far as I know, pelleted Hallertrau) in the brauhaus and I don't think that any hops are added after. All use yeast from commercial breweries - the main source seems to be Wurth in Eschawo but I think that Gloser probably use yeast from Gambrinus in Weiden, as Martin Popp's son, who does the brewing, now works there. There is a fair variety of sources for the malt, most from the supplier whose name I can't remember off the top of my head but it begins with 'I', but Rudi drives up to Bamberg and Weyermann for his - and visits a few brauerei whilst in town! Finally, I think that most of the Neuhaus brewers (H. Punzmann from Teicher and the guy from Kack'n brew for most of the stube) mill their malt in the local mill, as do some of the Eschawo brewers, but the brauhaus in Eschawo also has its own mill - all the mechanicals in the brauhaus are a nineteenth century miracle of belts and pulleys. All the aforementioned just demonstrate the huge amount of variables in Eschawo/Neuhaus - maybe only one beer, but countless small variations - which is why a stay of a month, minimum, is needed!
