The Umlaut in Welsh

Well I suppose there's Wales, and then there's Wales. I forgot to note that our Welsh week last summer was in the north and northwest, even in Caernarfon, supposedly the most Welsh of Welsh towns. We heard lots of it spoken and spoke to quite a few people about how much they speak it or not. I understand it's not quite the same in the south and southwest, to which we hope to journey next time. One early evening at the most excellent Black Boy Inn in Caernarfon, our table was across from two other tables, the inhabitants of which were discussing something in Welsh. For minutes on end the unintelligible consonant-laden conversation went on, but with the occasional "Spanish omelette" thrown in by both parties. Apparently there's no Caernarfonese word for "Spanish omelette".
